Is it at all possible to manually unpack Flatboard rather than using the unpacker?

Yes of course.
But why do not you want to go through the unpacker?
It is however faster to send than 2 files and you are certain to have the right write rights on the files.

I was having issues with the unpacker. Since I no longer have those issues, I no longer need to skip unpacking.

I am still having some issues with Flatboard. I'll post another topic for that
